This Beef Lombardi casserole is a hearty, flavorful dish made with seasoned ground beef, egg noodles, tomatoes, and a creamy, cheesy sauce.   • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 tsp chili powder
  • 1 tsp sugar
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cups cooked egg noodles
  • 2 cups shredded cheddar cheese
  • 1/4 cup green onions (optional for garnish)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • Heat olive oil in a skillet over medium heat. Add diced onions and cook until softened, about 3-4 minutes.
  • Add ground beef and cook until browned. Drain excess fat.
  • Stir in garlic, diced tomatoes, tomato paste, chili powder, sugar, salt, and pepper. Simmer for 5-7 minutes until thickened.
  • In a separate bowl, mix sour cream and cottage cheese together.
  • Layer half of the cooked egg noodles in the bottom of the prepared baking dish.
  • Spread half of the beef mixture over the noodles, followed by half of the sour cream and cottage cheese mixture.
  • Repeat the layers, finishing with shredded cheddar cheese on top.
  • Bake for 25-30 minutes, until the cheese is melted and bubbly.
  • Garnish with green onions if desired, and serve hot.
