  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  • Preheat oven to 350°F (175°C).
  • Cook egg noodles according to package instructions; drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, and sauté until softened, about 5 minutes.
  • Add ground beef to the skillet, cooking until browned. Drain excess fat.
  • Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Let simmer for 5 minutes.
  • In a large mixing bowl, combine sour cream, cottage cheese, and half of the shredded cheddar cheese.
  • Add the cooked noodles and the beef mixture to the cheese mixture, stirring until combined.
  • Transfer the mixture to a greased 9x13-inch baking dish.
  • Sprinkle the remaining cheddar cheese evenly over the casserole.
  • Bake uncovered for 20-25 minutes, until the cheese is melted and bubbly.
  • Let rest for 5 minutes before serving.
