This classic beef stew recipe combines tender beef chunks, fresh vegetables, and a savory broth, making it the ultimate comfort food.

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 2 cups potatoes, peeled and diced
  • 2 cups carrots, sliced
  • 1 cup celery, sliced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Toss the beef cubes in flour, salt, and pepper to coat evenly.
  2. Heat olive oil in a large pot and brown the beef in batches. Remove and set aside.
  3. In the same pot, sauté the onion and garlic until fragrant.
  4. Stir in the tomato paste, then add the beef broth, thyme, rosemary, and bay leaf.
  5. Return the beef to the pot, bring to a boil, then reduce heat and simmer for 1 hour.
  6. Add the potatoes, carrots, and celery. Simmer for an additional 30 minutes until vegetables are tender.
  7. Adjust seasoning with salt and pepper, remove bay leaf, and serve hot.
