Ingredients

  • 4 cups mixed salad greens (arugula, spinach, romaine)

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, sliced

  • 1 avocado, sliced

  • ½ red onion, thinly sliced

  • 1 cup strawberries or blueberries

  • ¼ cup feta cheese or goat cheese (optional)

  • ¼ cup toasted almonds or sunflower seeds

  • Fresh herbs (mint, basil, or parsley), chopped

For the Dressing:

  • 3 tbsp olive oil

  • 2 tbsp balsamic vinegar or lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp honey or maple syrup

  • Salt and pepper to taste

Instructions

  1. In a large salad bowl, combine greens, tomatoes, cucumber, avocado, red onion, berries, cheese, and nuts.

  2. In a small jar or bowl, whisk together olive oil, vinegar or lemon juice, mustard, honey, salt, and pepper until emulsified.

  3. Drizzle dressing over salad just before serving.
