  • 1 packet taco seasoning or homemade taco seasoning
  • 1 can (10 oz) enchilada sauce
  • 8 small corn tortillas, cut into quarters
  • 2 cups shredded Mexican blend cheese
  • 1/2 cup diced onion
  • 1 cup salsa
  • 1/2 cup sour cream (optional, for serving)
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned and the onions are softened. Drain excess fat.
  • Stir in the taco seasoning, black beans, and salsa. Cook for 2-3 minutes to combine flavors.
  • Spread a thin layer of enchilada sauce on the bottom of a greased 9x13-inch baking dish.
  • Layer 1/3 of the tortilla pieces over the sauce, followed by 1/3 of the beef and bean mixture, and 1/3 of the shredded cheese.
  • Repeat the layers two more times, ending with a final layer of cheese on top.
  • Pour the remaining enchilada sauce evenly over the top layer.
  • Cover the casserole with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool slightly before serving. Garnish with sour cream and fresh cilantro if desired.
