Indulge in a blackberry lavender cheesecake, combining the tartness of blackberries with the subtle floral notes of lavender. This unique dessert is both elegant and delicious, perfect for special occasions or a luxurious treat.

  • For the crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup sugar
    • 1/2 cup melted butter
  • For the filling:
    • 3 packages (8 oz each) cream cheese, softened
    • 1 cup sugar
    • 3 large eggs
    • 1 tsp vanilla extract
    • 1/4 cup sour cream
    • 1/2 cup blackberry puree
    • 1 tbsp dried culinary lavender, finely ground
  • For the topping:
    • 1 cup fresh blackberries
    • 1/4 cup blackberry jam
    • 1 tsp lavender buds (optional, for garnish)

Instructions

  • Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
  • Mix graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the pan to form the crust.
  • In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream.
  • Divide the filling mixture in half. Mix blackberry puree into one half and ground lavender into the other half.
  • Pour the lavender filling into the crust, spreading evenly. Gently spoon the blackberry filling on top and swirl with a knife to create a marbled effect.
  • Bake for 50-60 minutes, or until the center is set. Cool completely at room temperature, then refrigerate for at least 4 hours.
  • Before serving, top with fresh blackberries and warm blackberry jam. Garnish with lavender buds if desired.
