Main Ingredients:

  • 6 large flour tortillas
  • 8 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 pound breakfast sausage, bacon, or ham (optional)
  • 1 cup cooked and diced potatoes (or hash browns)
  • 1 small onion, finely chopped
  • 1 bell pepper (red, green, or yellow), finely chopped
  • 2 tablespoons butter or oil
  • Salt and pepper to taste

Optional Ingredients:

  • 1/4 cup salsa or hot sauce
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • Sour cream, for serving

Instructions

  1. In a skillet, cook breakfast sausage, bacon, or ham until browned. Remove from skillet and set aside.
  2. In the same skillet, add butter or oil and sautรฉ the diced potatoes until crispy and golden brown. Add the chopped onion and bell pepper, cooking until softened. Set aside.
  3. In a bowl, whisk together eggs, milk, salt, and pepper. Pour the egg mixture into the skillet and scramble until fully cooked.
  4. Warm the flour tortillas in a dry skillet or microwave.
  5. Assemble the burritos by layering scrambled eggs, cooked sausage or bacon, sautรฉed potatoes with onions and bell peppers, and shredded cheddar cheese on each tortilla.
  6. Add optional ingredients such as salsa, green onions, cilantro, avocado slices, and sour cream.
  7. Roll up the tortillas, folding in the sides to enclose the filling.
