    • 4 large flour tortillas
    • 6 large eggs
    • 1/4 cup milk
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
    • 1 tablespoon butter or oil for cooking
  • Optional Fillings:
    • 1/2 cup cooked breakfast sausage, crumbled
    • 1/2 cup cooked bacon, crumbled
    • 1/2 cup diced bell peppers
    • 1/2 cup diced onions
    • 1/2 cup diced tomatoes
    • 1/4 cup chopped fresh spinach
    • 1/4 cup chopped fresh cilantro
  • Toppings:
    • Salsa
    • Sour cream
    • Avocado

Instructions

  • Prepare the Eggs:
    • In a bowl, whisk together the eggs, milk, salt, and pepper.
    • Pour the egg mixture into a nonstick skillet over medium heat and cook, stirring occasionally, until the eggs are scrambled and just set. Remove from heat.
  • Assemble the Quesadillas:
    • Lay out the tortillas on a flat surface.
    • Sprinkle half of the cheese evenly over one side of each tortilla.
    • Top with scrambled eggs and your choice of optional fillings.
    • Sprinkle the remaining cheese on top of the fillings.
    • Fold the tortillas in half to enclose the fillings.
  • Cook the Quesadillas:
    • Heat the butter or oil in a large skillet over medium heat.
    • Cook each quesadilla for 2-3 minutes per side, or until the tortillas are golden brown and the cheese is melted.
  • Serve:
    • Cut each quesadilla into wedges.
    • Serve warm with salsa, sour cream, and avocado.
