  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup white rice
  • 2 cups chicken broth
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 1/4 cup cream cheese
  • 2 tablespoons butter
  • 1/2 cup green onions, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium heat. Season diced chicken with salt and pepper, then cook until browned and fully cooked, about 5-7 minutes. Remove chicken from skillet and set aside.
  • In the same skillet, melt butter and add rice. Stir to coat the rice in butter, cooking for 1-2 minutes.
  • Add chicken broth and bring to a simmer. Cover and cook until the rice is tender, about 15 minutes.
  • Stir in buffalo sauce, cream cheese, and cheddar cheese until melted and creamy.
