  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon hot sauce (adjust to taste)
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar
  • 1/4 cup chicken broth or water (optional for thinning the sauce)
  • Salt and black pepper, to taste
  • Soft hamburger buns (for serving)
  • Sliced green onions (optional garnish)

Homemade Cajun Seasoning:

  • 1 tablespoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon white pepper (optional)
  • 1/4 teaspoon salt

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped onion, green and red bell peppers. Sauté until softened, about 5 minutes.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Stir in the ground chicken, cooking until browned and fully cooked, breaking it up as it cooks.
  • Add tomato sauce, tomato paste, Worcestershire sauce, hot sauce, Cajun seasoning, smoked paprika, and brown sugar. Stir well.
  • Simmer for 10-15 minutes, thinning the sauce with chicken broth or water if needed.
  • Season with salt and pepper to taste.
  • Serve the Cajun chicken mixture on soft hamburger buns, garnish with sliced green onions if desired.

Notes

  • Adjust the amount of hot sauce and cayenne pepper in the Cajun seasoning for more or less heat.
  • Can be made with ground turkey or beef as an alternative to chicken.
