For the Cajun Chicken:
4 boneless, skinless chicken breasts
2 tbsp olive oil
1 tbsp Cajun seasoning
1 tsp garlic powder
1 tsp onion powder
ยฝ tsp smoked paprika
ยฝ tsp salt
ยผ tsp black pepper
Juice of ยฝ lemon
For the Alabama White Sauce:
1 cup mayonnaise
ยผ cup apple cider vinegar
1 tbsp lemon juice
1 tbsp prepared horseradish
1 tsp Dijon mustard
ยฝ tsp garlic powder
ยฝ tsp onion powder
ยผ tsp cayenne pepper (optional)
Salt and pepper to taste
Preheat grill to medium-high heat (about 400ยฐF/200ยฐC).
In a bowl, coat chicken breasts with olive oil, Cajun seasoning, garlic powder, onion powder, paprika, salt, pepper, and lemon juice.
Grill chicken 5โ7 minutes per side or until internal temperature reaches 165ยฐF (74ยฐC).
Meanwhile, whisk all Alabama White Sauce ingredients in a bowl until smooth. Chill until ready to serve.
