  • 1 lb fresh green beans, trimmed
  • 1 lb baby potatoes, halved
  • 1/2 lb smoked sausage, sliced
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 1 cup chicken broth
  • 1 tbsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil or butter
  • Chopped parsley for garnish (optional)

Instructions

  • In a large skillet or Dutch oven, heat olive oil or butter over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.
  • In the same pan, sauté the diced onion and garlic until softened, about 3 minutes.
  • Add the baby potatoes, Cajun seasoning, smoked paprika, salt, and pepper. Stir to coat the potatoes in the spices.
  • Pour in the chicken broth and bring to a simmer. Cover and cook for 10-12 minutes until the potatoes are fork-tender.
  • Add the green beans and cooked sausage back to the pan. Stir well, cover, and cook for another 8-10 minutes, or until the green beans are tender.
  • Adjust seasoning if needed, and garnish with chopped parsley before serving.

  • You can substitute andouille sausage for a spicier kick.
  • For a vegetarian version, omit the sausage and use vegetable broth.
