  • 1 cup rolled oats
  • 2 cups milk (or a dairy-free alternative like almond milk)
  • 1 cup water
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts or pecans
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional toppings: shredded coconut, Greek yogurt, extra nuts, and maple syrup

Instructions

  • In a medium saucepan, combine the rolled oats, milk, and water. Bring to a boil over medium-high heat.
  • Stir in the grated carrots, raisins, walnuts or pecans, maple syrup or honey, cinnamon, nutmeg, ginger, and salt.
  • Reduce the heat to low and simmer, stirring occasionally, until the oats are tender and the mixture is creamy, about 10-15 minutes.
  • Remove from heat and stir in the vanilla extract.
  • Serve hot with optional toppings such as shredded coconut, Greek yogurt, extra nuts, and a drizzle of maple syrup.

Notes

  • Adjust the sweetness by adding more or less maple syrup or honey to taste.
  • For a creamier texture, use only milk or a dairy-free alternative and omit the water.
