Cattle drive casserole is a robust, hearty dish packed with ground beef, vegetables, and layers of potatoes, cheese, and creamy sauce.   • 1 lb ground beef
  • 1 small onion, diced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10 oz) diced tomatoes with green chilies (drained)
  • 1 cup frozen corn
  • 1 cup shredded cheddar cheese
  • 3 large potatoes (thinly sliced)
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 2 tbsp olive oil

Instructions

  • Preheat oven to 350ยฐF (175ยฐC). Grease a 9x13-inch baking dish.
  • Heat olive oil in a skillet over medium heat. Add onions and cook until softened, about 3 minutes.
  • Add ground beef to the skillet, breaking it up and cooking until browned. Drain excess fat.
  • Stir in the cream of mushroom soup, diced tomatoes with green chilies, frozen corn, garlic powder, paprika, salt, and pepper. Remove from heat.
  • Layer half the sliced potatoes at the bottom of the prepared baking dish.
  • Spread half the beef mixture over the potatoes, followed by a layer of sour cream and a sprinkle of cheese.
  • Repeat the layers with the remaining potatoes, beef mixture, and cheese.
  • Cover with foil and bake for 40 minutes. Remove foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
  • Let cool for a few minutes before serving.

  • For a spicier kick, use spicy diced tomatoes with green chilies or add jalapeรฑos.
  • You can substitute ground turkey or chicken for a lighter version.
