  • 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 large russet or Yukon gold potatoes, peeled and diced
  • 2 cups shredded cheddar cheese
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup milk
  • 4 tablespoons melted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 1 teaspoon paprika (optional)
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 375ยฐF (190ยฐC).
  • In a large skillet, melt the butter over medium heat. Add the minced garlic and chopped onion, cooking until fragrant and soft.
  • Stir in the flour to make a roux, cooking for about 1 minute.
  • Gradually whisk in the milk until the sauce is smooth and thickened.
  • Add the cream cheese, sour cream, cheddar cheese, salt, pepper, and paprika (if using), stirring until the cheeses are melted and the sauce is well combined.
  • In a large bowl, combine the diced potatoes and chicken pieces. Pour the cheese sauce over the mixture and stir to coat evenly.
  • Transfer the mixture to a greased baking dish.
  • Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.
