These Cheesy Corn Fritters are a delightful combination of sweet corn and melted cheese, fried to golden perfection. Easy to make and incredibly tasty, they are ideal as a snack, appetizer, or side dish. Serve them with your favorite dipping sauce for an extra treat.

  • 2 cups fresh or canned corn kernels (drained if canned)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/4 cup milk
  • 2 tablespoons chopped green onions
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying (vegetable or canola oil)

Instructions

  • In a large bowl, combine the corn kernels, shredded cheddar cheese, flour, cornmeal, and baking powder.
  • In a separate bowl, whisk together the eggs, milk, chopped green onions, garlic powder, onion powder, salt, and black pepper.
  • Pour the wet ingredients into the dry ingredients and mix until well combined.
  • Heat oil in a large skillet over medium-high heat. Drop spoonfuls of the batter into the hot oil, flattening slightly with the back of a spoon.
  • Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.
  • Serve warm with your favorite dipping sauce.
