  • 1 packet taco seasoning
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 1/4 cup diced onion
  • 1 tbsp olive oil
  • Optional toppings: sour cream, salsa, guacamole, or jalapeรฑos

Instructions

  • Heat olive oil in a skillet over medium heat. Add diced onion and sautรฉ until soft.
  • Add ground beef and cook until browned, breaking it up into crumbles. Drain excess fat.
  • Stir in taco seasoning and a splash of water. Simmer for 2-3 minutes until fully combined.
  • Lay a tortilla flat on a clean surface. Sprinkle shredded cheese on one half, add cooked beef, then top with more cheese. Fold tortilla in half.
  • Heat a skillet over medium heat and cook the quesadilla for 2-3 minutes on each side until golden brown and the cheese is melted.
  • Repeat with remaining tortillas and filling.
  • Slice into wedges and serve with your favorite toppings.
