This cheesy loaded meatloaf casserole is the ultimate comfort food! Made with layers of seasoned ground beef, creamy mashed potatoes, and gooey melted cheese, it's a hearty and satisfying dish that's perfect for busy weeknights or family dinners.

  • 1 lb ground beef
  • 1 cup bread crumbs
  • 1/2 cup diced onions
  • 1 egg
  • 1/4 cup ketchup
  • 2 cups mashed potatoes (pre-cooked)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/4 cup sour cream
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a casserole dish.
  2. In a large bowl, combine ground beef, bread crumbs, onions, egg, ketchup, garlic powder, salt, and pepper. Mix well.
  3. Press the meat mixture into the casserole dish to form an even layer.
  4. Spread the mashed potatoes over the meat mixture.
  5. Top with shredded cheddar cheese and bacon bits.
  6. Bake for 25-30 minutes until the cheese is melted and bubbly.
  7. Let rest for 5 minutes before serving.
