  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • ยผ cup grated Parmesan cheese
  • ยผ cup milk
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon onion powder
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • 2 tablespoons chopped chives (optional)

Instructions

  • Preheat oven to 400ยฐF (200ยฐC) and grease a mini muffin tin.
  • In a large bowl, mix mashed potatoes, cheddar cheese, Parmesan, eggs, milk, garlic powder, onion powder, salt, pepper, and baking powder until combined.
  • Spoon the mixture into the muffin tin, filling each cup about ยพ full.
  • Bake for 20-25 minutes or until golden brown and crispy on the edges.
  • Let cool slightly before removing from the tin. Garnish with chives if desired.
