Ingredients

Scale
  • For the Cookie Dough:
    • 1 cup (2 sticks) unsalted butter, softened
    • 1/2 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon almond extract
    • 1 1/2 cups all-purpose flour
    • 1 cup almond flour (or finely ground blanched almonds)
    • 1/4 teaspoon salt
    • Powdered sugar (for dusting)
  • For the Filling:
    • 3/4 cup cherry preserves or cherry jam
    • 1 tablespoon lemon juice (optional, for tartness)

Instructions

  • Make the Cookie Dough:
    • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Beat in the egg, vanilla extract, and almond extract.
    • In a separate bowl, whisk together all-purpose flour, almond flour, and salt.
    • Gradually add the dry ingredients to the butter mixture until fully combined.
    • Shape the dough into a disk, wrap in plastic wrap, and chill for at least 1 hour.
  • Roll and Cut:
    • Preheat oven to 350°F (175°C).
    • Roll out the chilled dough to about 1/8-inch thickness on a floured surface.
    • Use a round or fluted cookie cutter to cut out the base cookies, and cut smaller shapes (like hearts or stars) from the center of half of the cookies to create "windows."
    • Place cookies on a baking sheet lined with parchment paper.
  • Bake and Assemble:
    • Bake cookies for 10-12 minutes or until edges are lightly golden. Let them cool completely on a wire rack.
    • Once cooled, spread cherry preserves onto the full cookies. If using, mix lemon juice into the preserves for added tartness.
    • Dust the cookies with the cut-out "windows" with powdered sugar, then sandwich them on top of the jam-filled cookies.

Notes

  • You can substitute other types of preserves (like raspberry or apricot) for the cherry preserves.
  • The dough can be made ahead and refrigerated for up to 2 days or frozen for up to a month.
  • Store cookies in an airtight container for up to 5 days.
