1 cup unsalted butter, softened
3/4 cup powdered sugar
1 teaspoon almond extract
2 cups all-purpose flour
1/4 teaspoon salt
1/2 cup dried cherries, chopped
1/4 cup slivered almonds, toasted
Instructions
Preheat oven to 325ยฐF (165ยฐC).
In a large bowl, cream together butter and powdered sugar until light and fluffy. Mix in almond extract.
Gradually add flour and salt, mixing until well combined.
Stir in chopped dried cherries and toasted slivered almonds.
Roll dough into 1-inch balls and place on a baking sheet lined with parchment paper. Flatten each ball slightly with the bottom of a glass.
Bake for 15-18 minutes, or until the edges are lightly golden.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a more pronounced almond flavor, add an extra 1/2 teaspoon of almond extract.
