  • 4 boneless, skinless chicken breasts (thinly sliced)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 cup chicken broth
  • 1/3 cup fresh lemon juice
  • 1/4 cup white wine (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Pound chicken breasts to an even thickness and season with salt and pepper.
  • Dredge the chicken in flour, then dip in a beaten egg mixture with Parmesan cheese.
  • Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes on each side until golden. Remove and set aside.
  • In the same skillet, melt butter, then add chicken broth, lemon juice, and white wine. Simmer for 2-3 minutes.
  • Return chicken to the skillet, spooning sauce over it, and simmer for 5 minutes until the sauce thickens.
  • Garnish with fresh parsley and serve with lemon slices.
