  • 2 large eggs
  • 1/2 cup buttermilk
  • Vegetable oil for frying

For the Gravy (Optional):

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • Salt and pepper to taste

Instructions

  • Prepare the chicken: Pound chicken breasts to an even thickness.
  • Season the flour mixture: In a bowl, mix flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper.
  • Set up the dredging station: In one bowl, whisk eggs with buttermilk. In another bowl, place the seasoned flour mixture.
  • Coat the chicken: Dip each chicken breast in the egg mixture, then dredge in the flour mixture, ensuring an even coating.
  • Heat the oil: In a large skillet, heat about 1/2 inch of vegetable oil over medium heat until it reaches 350°F.
  • Fry the chicken: Fry each chicken breast for 4-5 minutes on each side, or until golden brown and fully cooked through. Remove and drain on paper towels.
  • Optional - Make the gravy: In a saucepan, melt butter. Stir in flour and cook until golden. Slowly whisk in milk, cooking until thickened. Season with salt and pepper.
  • Serve: Drizzle the gravy over the fried chicken and serve immediately.

  • You can make the chicken ahead and reheat in the oven to retain crispness.
  • Substitute chicken cutlets or tenderloins for faster cooking.
