  • 12 oz pasta (such as penne or fettuccine)
  • 2 boneless, skinless chicken breasts, cubed
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • 1 tsp dried Italian seasoning
  • Fresh basil or parsley, chopped (optional)

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • Season the cubed chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Cook the chicken until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  • In the same skillet, add the minced garlic and cook for about 1 minute until fragrant.
  • Add the cherry tomatoes and cook until they start to soften, about 3-4 minutes.
  • Pour in the heavy cream and chicken broth, stirring to combine. Bring to a simmer and cook until the sauce begins to thicken, about 5 minutes.
  • Stir in the Parmesan cheese and Italian seasoning. Add the cooked chicken back to the skillet and toss to coat in the sauce.
  • Add the cooked pasta to the skillet and toss to combine with the sauce and chicken.
  • Garnish with fresh basil or parsley if desired. Serve immediately.

Notes

  • You can substitute half-and-half for a lighter sauce.
  • Add spinach or broccoli for extra vegetables.
  • Use grilled chicken for a smoky flavor.
