Easy Chicken Quesadillas are a delicious and quick meal featuring seasoned chicken, melted Mexican blend cheese, and chopped bell peppers and onions, all toasted to perfection in large flour tortillas. Serve with sour cream, salsa, and sliced avocado for a satisfying and flavorful dish.

 

Ingredients

  • Main Ingredients:
    • Chicken: 2 boneless, skinless chicken breasts
    • Tortillas: 4 large flour tortillas
    • Cheese: 2 cups shredded Mexican blend cheese or cheddar cheese
    • Bell Pepper: 1 bell pepper, finely chopped
    • Onion: 1 small onion, finely chopped
    • Olive Oil: 2 tablespoons
    • Garlic Powder: 1 teaspoon
    • Cumin: 1 teaspoon
    • Chili Powder: 1 teaspoon
    • Salt: 1/2 teaspoon
    • Black Pepper: 1/2 teaspoon
  • Optional Ingredients:
    • Sour Cream: For serving
    • Salsa: For serving
    • Avocado: Sliced, for serving
    • Cilantro: Chopped, for garnish
    • Jalapeños: Sliced, for extra heat

Instructions

  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Season chicken breasts with garlic powder, cumin, chili powder, salt, and black pepper.
  • Cook chicken in the skillet for about 5-7 minutes per side, or until fully cooked. Remove from heat and let it rest before slicing into thin strips.
  • In the same skillet, add the remaining olive oil and sauté the chopped bell pepper and onion until softened, about 5 minutes.
  • Lay a tortilla flat and sprinkle a layer of shredded cheese over half of it. Add sliced chicken, sautéed vegetables, and more cheese. Fold the tortilla over to enclose the filling.
  • Heat the skillet over medium heat and cook the quesadilla for about 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted.
  • Repeat with the remaining tortillas and filling.
  • Cut each quesadilla into wedges and serve with sour cream, salsa, and sliced avocado. Garnish with chopped cilantro and sliced jalapeños if desired.

Notes

  • Use a mix of cheeses for extra flavor.
  • For a spicier kick, add more chili powder or sliced jalapeños to the filling.
  • Serve with a side of Mexican rice or beans for a complete meal.
