For Chicken:

  • 2 cups cooked chicken breast, diced or shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For Pasta Salad:

  • 3 cups dry pasta (rotini, penne, or fusilli work well)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers (red, yellow, or green), diced
  • 1/2 cup red onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped (optional)

For Ranch Dressing:

  • 1 cup ranch dressing (store-bought or homemade)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried dill
  • Salt and pepper to taste

Instructions

  • In a medium bowl, mix diced or shredded chicken with olive oil, garlic powder, onion powder, salt, and black pepper. Set aside.
  • Cook the pasta according to package instructions. Drain and let cool.
  • In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, bell peppers, red onion, cheddar cheese, parsley, and dill if using.
  • In a separate bowl, whisk together ranch dressing, sour cream, mayonnaise, lemon juice, garlic powder, onion powder, dried dill, salt, and pepper.
  • Add the seasoned chicken to the pasta mixture. Pour the ranch dressing over the salad and toss to coat evenly.
  • Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
