  • 1 whole chicken (about 4 pounds), cut into pieces
  • 8 cups chicken broth (preferably low-sodium)
  • 4 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup fresh parsley, chopped
  • 2 cups egg noodles (optional)
  • Juice of 1 lemon (optional)

Instructions

  • In a large pot, place the chicken pieces and cover with chicken broth. Bring to a boil, then reduce heat to simmer.
  • Add the carrots, celery, onion, garlic, bay leaves, and thyme. Simmer for 1 to 1.5 hours, until the chicken is cooked and the vegetables are tender.
  • Remove the chicken, shred the meat, and discard the bones. Return the chicken to the pot.
  • Season with salt and pepper to taste. Stir in parsley and egg noodles, if using, and cook until the noodles are tender.
  • Optional: Add lemon juice before serving for a bright, fresh finish.

  • For a richer flavor, use homemade chicken broth.
  • You can adjust the thickness by adding more or less broth.
