  • 2 tbsp olive oil
  • 1 lb chicken breast, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup tomato paste
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • 12 oz pasta (e.g., penne or spaghetti)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Add chicken and season with salt and pepper. Cook until browned and fully cooked. Remove and set aside.
  • In the same skillet, sautรฉ onion and garlic until fragrant.
  • Add diced tomatoes, tomato paste, chicken broth, Italian seasoning, and red pepper flakes. Simmer for 10 minutes until sauce thickens.
  • Cook pasta in a pot of salted water according to package instructions. Drain and set aside.
  • Return chicken to the skillet, then toss the sauce with cooked pasta. Mix well.
  • Serve topped with Parmesan cheese and fresh basil leaves.
