4 boneless, skinless chicken breasts
1/2 cup flour (for dredging)
Salt and pepper to taste
2 tablespoons olive oil
3 tablespoons butter, divided
3 cloves garlic, minced
1 cup chicken broth (low sodium preferred)
1/2 cup white wine (or additional chicken broth)
1/4 cup lemon juice (freshly squeezed)
1 tablespoon lemon zest
2 tablespoons capers, drained
2 tablespoons parsley, chopped (for garnish)
Instructions
Season chicken breasts with salt and pepper. Dredge in flour, shaking off excess.
Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat.
Cook chicken breasts until golden and cooked through, about 5-7 minutes per side. Remove and set aside.
In the same skillet, add garlic and cook until fragrant, about 1 minute.
Pour in chicken broth, white wine, lemon juice, and lemon zest. Stir and bring to a simmer.
Add remaining 2 tablespoons butter and capers. Cook until the sauce thickens slightly, about 5 minutes.
Return chicken to the skillet, spooning sauce over the top. Simmer for another 2-3 minutes.
