  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 2 tbsp tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 1 cup beef broth
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Optional: Sour cream, shredded cheese, sliced green onions, chopped cilantro

Instructions

  • Heat olive oil in a large pot over medium heat. Add chopped onions and garlic, sauté until softened.
  • Add ground beef to the pot, cook until browned. Drain excess fat.
  • Stir in chili powder, cumin, smoked paprika, and tomato paste. Cook for 1-2 minutes until fragrant.
  • Add diced bell peppers, crushed tomatoes, and beef broth. Bring to a simmer.
  • Stir in kidney beans and black beans. Season with salt and pepper.
  • Simmer on low heat for 30 minutes, stirring occasionally.
  • Serve hot with optional garnishes.
