Ingredients

  • Pork Shoulder (2-3 pounds)
  • Tomatillos (1.5 pounds)
  • Poblano Peppers (2)
  • Jalapeños (1-2)
  • Garlic Cloves (4-6)
  • Onion (1 large)
  • Cilantro (1 bunch)
  • Chicken Broth (2 cups)
  • Olive Oil (2 tablespoons)
  • Cumin (1 teaspoon)
  • Salt and Pepper (to taste)
  • Lime Juice (2 tablespoons)
  • Bay Leaves (2)

Instructions

  • Sauté the pork shoulder in olive oil until browned on all sides. Set aside.
  • In the same pot, add chopped onions, garlic, and peppers; cook until softened.
  • Add the tomatillos and cook until they start to break down.
  • Return the pork to the pot, add cumin, salt, pepper, bay leaves, and chicken broth.
  • Simmer for 2-2.5 hours until the pork is tender.
  • Stir in chopped cilantro and lime juice before serving.
