  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup mini chocolate chips

Instructions

  • Preheat oven to 325ยฐF (165ยฐC).
  • In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of a 9-inch springform pan.
  • In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  • Fold in chocolate chips and pour the mixture over the crust.
  • Bake for 45-50 minutes or until the center is set.
  • Cool in the pan for 10 minutes, then run a knife around the edge to loosen. Refrigerate for at least 4 hours before serving.

Notes

  • Use mini chocolate chips for better distribution in the cheesecake.
  • For a firmer cheesecake, refrigerate overnight.
