Classic Beef Bourguignon is a flavorful French dish featuring tender beef slow-cooked in red wine with mushrooms, onions, and carrots.

Ingredients

  • 2 lbs beef chuck, cubed
  • 4 slices of bacon, diced
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 cups red wine
  • 2 cups beef stock
  • 1 tbsp flour
  • 1 cup pearl onions, peeled
  • 1 cup mushrooms, sliced
  • 2 tbsp olive oil
  • 2 tsp fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook diced bacon until crispy. Remove and set aside.
  2. In the same pot, sear beef cubes in batches until browned. Remove and set aside.
  3. Add olive oil to the pot, sauté onions, carrots, and garlic until softened.
  4. Stir in tomato paste and flour, cooking for 1 minute.
  5. Pour in red wine and deglaze the pot, scraping up browned bits.
  6. Add beef stock, thyme, bay leaves, and reserved bacon and beef. Simmer for 1.5-2 hours.
  7. In a skillet, sauté pearl onions and mushrooms until golden. Add them to the pot in the final 30 minutes of cooking.
  8. Serve warm with crusty bread or over mashed potatoes.

Notes

  • Use a dry red wine such as Burgundy or Pinot Noir for the best flavor.
  • Make it a day ahead to enhance the flavors.
