  • 2 cups elbow macaroni, cooked and cooled

  • 1 cup mayonnaise

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon Dijon mustard

  • 1 teaspoon sugar

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 cup celery, diced

  • 1/2 cup red bell pepper, diced

  • 1/2 cup red onion, finely chopped

  • 1/2 cup carrots, shredded

  • 2 hard-boiled eggs, chopped (optional)

Instructions

  1. In a large bowl, combine mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper. Mix well to create the dressing.

  2. Add the cooked and cooled macaroni to the dressing.

  3. Stir in celery, red bell pepper, red onion, carrots, and chopped eggs.

  4. Mix thoroughly until all ingredients are coated with the dressing.

  5. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.

  6. Serve chilled.

Notes

  • For a lighter version, substitute Greek yogurt for half the mayonnaise.
