Ingredients

  • 4 large russet potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 hard-boiled eggs, chopped
  • 2 celery stalks, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped (optional for garnish)
  • 1 tablespoon dill relish (optional for added flavor)

Instructions

  • Boil the cubed potatoes in salted water until tender, about 10-15 minutes. Drain and let cool slightly.
  • In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper.
  • Add the cooled potatoes to the bowl and gently toss to coat with the dressing.
  • Stir in the chopped hard-boiled eggs, celery, and red onion.
