1 can (13.5 oz) coconut milk
2 tbsp curry powder
1 tbsp olive oil
1 onion, diced
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tbsp tomato paste
1 tsp paprika
1 tsp salt
½ tsp black pepper
1 tsp chili flakes (optional, for heat)
Fresh cilantro for garnish
Heat olive oil in a large skillet over medium heat.
Sauté onions until translucent, about 5 minutes.
Add garlic, ginger, curry powder, paprika, salt, and pepper. Cook until fragrant (2 minutes).
