  • 1 large egg

  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil (for frying)

Instructions

  • In a large bowl, whisk together flour, cornmeal (if using), baking powder, garlic powder, salt, and pepper.
  • In a separate bowl, beat the egg and milk together. Add to the dry ingredients and mix until smooth.
  • Fold in the corn kernels and green onions until well combined.
  • Heat vegetable oil in a large skillet over medium heat. Drop spoonfuls of the batter into the hot oil, flattening slightly with the back of the spoon.
  • Fry for 2-3 minutes per side, or until golden brown and crispy. Transfer fritters to a paper towel-lined plate to drain excess oil.
