4 bone-in pork chops
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper (optional)
2 large eggs
2 tablespoons milk
1/2 cup vegetable oil (for frying)
For the Bacon Gravy:
4 slices bacon, chopped
2 tablespoons bacon drippings
2 tablespoons all-purpose flour
1 1/2 cups whole milk
Salt and pepper, to taste
Instructions
Prepare the Pork Chops: Pat pork chops dry. In a shallow dish, mix flour, salt, pepper, paprika, garlic powder, onion powder, and cayenne.
In another dish, whisk eggs and milk. Dredge each pork chop in the flour mixture, then egg mixture, then back into the flour.
Heat oil in a skillet over medium heat. Fry pork chops for 4-5 minutes per side until golden brown and cooked through. Drain on paper towels.
Make the Bacon Gravy: Cook bacon in the same skillet until crispy. Remove and set aside, leaving about 2 tablespoons of drippings.
Stir in flour and cook for 1-2 minutes. Slowly whisk in milk, stirring until smooth and thickened. Season with salt and pepper.
Stir in crispy bacon and serve over fried pork chops.
Notes
Use a meat thermometer to ensure pork chops reach 145°F internally.
For extra crispy chops, let them rest for 5 minutes before serving.
