For the Pork Chops:

  • 4 bone-in pork chops
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • 2 large eggs
  • 2 tablespoons milk
  • 1/2 cup vegetable oil (for frying)

For the Bacon Gravy:

  • 4 slices bacon, chopped
  • 2 tablespoons bacon drippings
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • Salt and pepper, to taste

Instructions

  • Prepare the Pork Chops: Pat pork chops dry. In a shallow dish, mix flour, salt, pepper, paprika, garlic powder, onion powder, and cayenne.
  • In another dish, whisk eggs and milk. Dredge each pork chop in the flour mixture, then egg mixture, then back into the flour.
  • Heat oil in a skillet over medium heat. Fry pork chops for 4-5 minutes per side until golden brown and cooked through. Drain on paper towels.
  • Make the Bacon Gravy: Cook bacon in the same skillet until crispy. Remove and set aside, leaving about 2 tablespoons of drippings.
  • Stir in flour and cook for 1-2 minutes. Slowly whisk in milk, stirring until smooth and thickened. Season with salt and pepper.
  • Stir in crispy bacon and serve over fried pork chops.

Notes

  • Use a meat thermometer to ensure pork chops reach 145°F internally.
  • For extra crispy chops, let them rest for 5 minutes before serving.
  • Serve with mashed potatoes or biscuits for a complete meal.
