Ingredients

Scale

For the Crust and Crumble:

  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

For the Cranberry Filling:

  • 3 cups fresh or frozen cranberries
  • 3/4 cup granulated sugar
  • 1/4 cup orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons cornstarch

For the Oat Crumble Topping:

  • 1/2 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar, packed
  • 1/4 teaspoon cinnamon
  • 1/4 cup cold unsalted butter, cubed

Instructions

  1. Prepare the Crust and Crumble:
    • Preheat the oven to 350ยฐF (175ยฐC). Line a baking pan with parchment paper.
    • In a bowl, combine melted butter, flour, granulated sugar, brown sugar, salt, and vanilla extract. Mix until crumbly.
    • Press two-thirds of the mixture into the bottom of the prepared pan to form the crust.
  2. Make the Cranberry Filling:
    • In a saucepan, combine cranberries, sugar, orange juice, orange zest, and cornstarch. Cook over medium heat until the cranberries burst and the mixture thickens.
    • Spread the cranberry filling evenly over the crust.
  3. Prepare the Oat Crumble Topping:
    • In a separate bowl, mix oats, flour, brown sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
    • Sprinkle the oat crumble evenly over the cranberry filling.
  4. Bake:
    • Bake for 35-40 minutes, or until the topping is golden brown. Allow the bars to cool completely before cutting into squares.

Notes

  • For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend and use certified gluten-free oats.
  • For a vegan version, replace butter with a vegan alternative or coconut oil.
  • You can swap cranberries with other berries or add chopped nuts for extra texture.
