  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/3 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 2 tbsp all-purpose flour
  • Powdered sugar for dusting

Instructions

  • Preheat oven to 350°F (175°C).
  • In a bowl, mix 1 cup flour, softened butter, and 1/4 cup powdered sugar until crumbly. Press into the bottom of a greased 9x9 inch baking pan.
  • Bake crust for 15 minutes or until lightly golden.
  • In another bowl, beat cream cheese and granulated sugar until smooth. Add eggs, lemon juice, lemon zest, and 2 tbsp flour. Mix until well combined.
  • Pour cream cheese mixture over the baked crust and spread evenly.
  • Bake for an additional 20-25 minutes, or until filling is set.
  • Allow to cool completely, then dust with powdered sugar before serving.

Notes

  • Store in the refrigerator for up to 5 days.
  • For a more intense lemon flavor, increase the lemon zest to 2 tablespoons.
