1 lb chicken breast, cut into bite-sized pieces
2 tbsp Cajun seasoning
2 tbsp olive oil
3 tbsp butter
4 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 cup Parmesan cheese, grated
1 tsp paprika
½ tsp red pepper flakes (optional)
Salt and black pepper, to taste
½ cup cherry tomatoes, halved
½ cup bell peppers, sliced
¼ cup parsley, chopped
Cook pasta according to package instructions; drain and set aside.
Season shrimp and chicken with Cajun seasoning.
Heat olive oil in a large skillet over medium-high heat. Cook chicken until golden brown, then remove.
In the same skillet, cook shrimp for 2-3 minutes per side until pink; remove.
Melt butter in the skillet, sauté garlic, bell peppers, and tomatoes for 2 minutes.
Add heavy cream, chicken broth, Parmesan cheese, paprika, and red pepper flakes. Stir and simmer for 5 minutes.
Return cooked chicken and shrimp to the skillet, toss with sauce.
Add cooked pasta, mix well, and cook for another 2 minutes.
Garnish with parsley and serve hot.
Adjust Cajun seasoning to taste for more or less spice.
Use half-and-half instead of heavy cream for a lighter version.
Add more vegetables like spinach or mushrooms for extra nutrition.
