  • 3 cups cooked chicken breast, shredded or cubed
  • 4 cups fresh spinach, roughly chopped
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)
  • 2 tbsp melted butter (for breadcrumbs)

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • In a large skillet, sauté the diced onion and garlic over medium heat until softened, about 3-4 minutes. Add spinach and cook until wilted. Set aside.
  • In a large bowl, mix the cream of chicken soup, sour cream, mayonnaise, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  • Stir in the cooked chicken and sautéed spinach mixture until well combined.
  • Transfer the mixture into the prepared baking dish and top with shredded mozzarella cheese.
  • If using breadcrumbs, mix them with melted butter and sprinkle over the top of the casserole.
  • Bake for 20-25 minutes, or until the casserole is hot and bubbly, and the cheese is melted and golden.
  • Let it cool for a few minutes before serving.

Notes

  • For a lighter option, use Greek yogurt instead of sour cream and mayonnaise.
  • Add cooked pasta or rice for a heartier meal.
