  • 12 oz spaghetti or fettuccine
  • 2 chicken breasts, diced
  • 4 slices of bacon, chopped
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1/2 cup heavy cream
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook pasta according to package instructions. Reserve 1 cup of pasta water before draining.
  • Heat olive oil in a skillet over medium heat. Cook chicken until golden and fully cooked. Set aside.
  • In the same skillet, cook bacon until crispy. Remove excess grease, leaving 1-2 tbsp in the pan.
  • Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  • In a bowl, whisk together eggs, Parmesan, and heavy cream. Season with salt and pepper.
  • Add cooked pasta, chicken, and bacon back into the skillet. Remove from heat.
  • Quickly pour the egg mixture over the pasta, tossing continuously until creamy. Add reserved pasta water as needed to adjust the sauce's consistency.
  • Garnish with parsley and serve immediately.

  • For extra flavor, add a pinch of red pepper flakes or grated lemon zest.
  • Ensure the skillet is off the heat when adding the egg mixture to prevent scrambling.
