  • 4 boneless, skinless chicken breasts
  • 1 can (13.5 oz) coconut milk
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 tsp ground turmeric
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper.
  • Sear chicken for 5-6 minutes on each side until golden. Remove and set aside.
  • In the same skillet, sautรฉ onion, garlic, and ginger until fragrant and softened.
  • Stir in turmeric, cumin, and paprika, cooking for 1 minute.
