  • 16 large white mushrooms
  • 8 oz crab meat
  • 4 oz cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup green onions, finely chopped
  • 1/4 cup red bell pepper, finely chopped
  • 1 clove garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional)

Instructions

  • Preheat oven to 375ยฐF (190ยฐC).
  • Clean mushrooms and remove stems. Set caps aside and finely chop stems.
  • In a mixing bowl, combine crab meat, cream cheese, Parmesan cheese, green onions, bell pepper, garlic, parsley, lemon juice, chopped mushroom stems, salt, and pepper.
  • Spoon the crab mixture into the mushroom caps, pressing gently to fill.
  • Optionally, sprinkle breadcrumbs on top of each stuffed mushroom.
  • Place stuffed mushrooms on a baking sheet and bake for 20 minutes or until the tops are golden and the mushrooms are tender.
  • Serve warm, garnished with extra parsley if desired.
