Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Cannellini beans or Great Northern beans
  • Green chilies
  • Chicken broth
  • Onion, finely chopped
  • Garlic, minced
  • Cumin
  • Oregano
  • Cayenne pepper (optional)
  • Salt and pepper
  • Cream cheese
  • Heavy cream
  • Lime juice
  • Fresh cilantro, chopped
  • Corn (optional)
  • Toppings: Shredded cheese, sour cream, avocado slices, tortilla chips, jalapeños (optional)

Instructions

  • Place chicken, beans, green chilies, chicken broth, onion, garlic, cumin, oregano, cayenne, salt, and pepper in the crockpot.
  • Cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender.
  • Shred the chicken in the crockpot.
  • Stir in cream cheese and heavy cream until melted and smooth.
  • Add lime juice and cilantro. Cook for another 10-15 minutes.
  • Serve with your choice of toppings.

Notes

  • For a thicker chili, mash some of the beans before adding them to the crockpot.
  • This chili freezes well; just omit the dairy until reheating.
  • Adjust the cayenne for more or less heat.
