Ingredients

Scale
  • 1 pound Italian sausage (mild or hot, casing removed if using links)
  • 1 medium onion, chopped
  • 3-4 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes (fire-roasted or plain)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh or frozen spinach
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste

Optional Garnishes:

  • Chopped fresh parsley or basil
  • Crusty bread
  • Extra grated Parmesan cheese

Instructions

  • Heat olive oil in a large pot over medium heat. Add sausage and cook, breaking it up, until browned.
  • Add onions, garlic, carrots, and celery to the pot. Sauté until vegetables are softened.
  • Stir in Italian seasoning and red pepper flakes (if using), cooking for another minute.
  • Pour in chicken broth and diced tomatoes. Bring to a simmer and cook for 10-15 minutes, allowing flavors to meld.
  • Stir in spinach and heavy cream, cooking until the spinach wilts.
  • Add Parmesan cheese and stir until melted. Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley or basil and extra Parmesan. Pair with crusty bread for dipping.

Notes

  • For a lower-calorie option, you can substitute half-and-half for heavy cream.
  • Adjust the spice level with red pepper flakes or by using hot Italian sausage.
  • For a thicker soup, blend a portion of the soup before adding the spinach.
