  • 12 oz pasta (such as spaghetti or fettuccine)
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 lemon (zested and juiced)
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup pasta water (reserved)

Instructions

  • Cook pasta according to package instructions. Reserve 1/4 cup of pasta water before draining.
  • In a large pan, heat olive oil over medium heat and sautรฉ garlic until fragrant (about 1 minute).
  • In a bowl, mix ricotta, Parmesan, lemon zest, lemon juice, salt, black pepper, and red pepper flakes.
  • Add the cooked pasta to the pan and toss with the ricotta mixture. Gradually add pasta water to create a smooth, creamy sauce.
  • Stir well to coat the pasta evenly, then remove from heat.
