  • 8 oz pasta
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 12 oz mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  • Add garlic and mushrooms to the skillet. Cook until mushrooms are tender and browned, about 8 minutes.
  • Stir in the heavy cream and bring to a simmer. Cook until the sauce thickens slightly, about 5 minutes.
  • Add the spinach and cook until wilted, about 2 minutes.
  • Stir in the cooked pasta and Parmesan cheese. Season with salt and pepper to taste.
  • Serve immediately, garnished with additional Parmesan if desired.

  • For a lighter version, substitute half-and-half for the heavy cream.
