8 oz pasta
2 tbsp olive oil
1 onion, chopped
3 cloves garlic, minced
12 oz mushrooms, sliced
1 cup heavy cream
1 cup spinach, chopped
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Cook the pasta according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
Add garlic and mushrooms to the skillet. Cook until mushrooms are tender and browned, about 8 minutes.
Stir in the heavy cream and bring to a simmer. Cook until the sauce thickens slightly, about 5 minutes.
Add the spinach and cook until wilted, about 2 minutes.
Stir in the cooked pasta and Parmesan cheese. Season with salt and pepper to taste.
Serve immediately, garnished with additional Parmesan if desired.
