  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
  • 3 tablespoons butter
  • 2 tablespoons flour (for thickening)
  • Salt and pepper, to taste
  • Optional: 1 cup shredded cheddar cheese

Instructions

  • In a large pot, cook diced bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside. Drain excess fat, leaving about 1 tablespoon in the pot.
  • Add butter to the pot and sauté the onions and garlic until softened.
  • Stir in flour to make a roux, cooking for 1-2 minutes.
  • Gradually add chicken broth, stirring constantly. Bring to a simmer and add diced potatoes.
  • Cook for 15-20 minutes, until potatoes are tender.
  • Stir in heavy cream and milk, simmering until the soup thickens to your desired consistency.
  • Season with salt and pepper, and stir in optional shredded cheddar cheese if using.
  • Serve hot, garnished with crispy bacon, chives, and any other desired toppings.
